Me versus the binge monster - Day 16, Week 3


God, don’t know what was going on today but all I wanted to do was eat. I think my blood sugar was out of wack and I’m pretty sure I forgot to take my meds this morning.
All I wanted to do was get off work, binge on as much fast food as I could get my hands on and then pass out and sleep until tomorrow. I couldn’t get my thoughts to deviate from food. I had extreme hunger and was very lethargic which both are symptoms of high blood sugar. The binge monster is a very conniving fellow. He tempts me with his delicious treats.
I was so tired and sluggish that I went home and slept for an hour. I was thankful that I was too tired to even get food. I heard L get home and even though we had made plans to make dinner together and go for a walk I did not want to get up. My arms and legs felt so heavy and I could barely keep my eyes open. All I wanted to do was sleep.
I managed to make myself get up. First because I felt obligated to L since we had agreed to exercise and make a healthy dinner and also because I knew a walk could bring my blood sugar down. Even though all I wanted to do was sleep, I knew that exercise was what I needed.
We went for a 30 minute walk and did a little bit of jogging. It was nothing to demanding especially since I kept having a wardrobe malfunction. As I was jogging I felt my underwear keep slipping down. At one point I just had to reach in there and pull them up or I wouldn’t be able to keep jogging. It was pretty funny and embarrassing but after I pulled them all the way up they managed to stay there and I was much more comfortable.
When we got home L tried out a recipe for Pad Thai. Something neither of us had ever cooked before. It also had some ingredients we weren’t familiar with. I decided to make dessert which I got through Kraft. I signed up with their website and they sent me a bunch of really good coupons, information about diabetes and low fat recipes. I made the Easy Strawberry Mousse and it was pretty good. Not to sweet but sweet enough with just a hint of tartness. It also has a very creamy texture that reminded me of cheesecake. It was also so simple to make. The recipe is below.

Makes:10 servings
1 pkg. (8 oz.) PHILADELPHIA Fat Free Cream Cheese, softened
1 tsp. vanilla
1/2 cup boiling water
1 pkg. (4-serving size) JELL-O Brand Strawberry Flavor Sugar Free Low Calorie Gelatin
1/2 cup cold water
2 cups thawed COOL WHIP Sugar Free Whipped Topping, divided
2 cups sliced strawberries
BEAT cream cheese and vanilla in large bowl with electric mixer on low speed until well blended; set aside.
STIR boiling water into dry gelatin mix in small bowl at least 2 min. until completely dissolved. Add cold water; stir until slightly thickened. Gradually add to cream cheese mixture, beating after each addition until well blended. Gently stir in 1-1/2 cups of the whipped topping and the strawberries.
SPOON evenly into 10 small dessert dishes. Refrigerate at least 1 hour or until firm. Top each with a dollop of the remaining whipped topping just before serving. Store leftovers in refrigerator.

Breakfast (8:30 AM): Bagel breakfast sandwich (everything bagel, egg, bacon, cheese, tomato) diet Pepsi Max

Lunch: (10:45 PM): Turkey sandwich (marble rye bread, turkey, light mayo, spicy mustard, low fat cheddar cheese) snack size bag BBQ Lays chips, Diet Pepsi.

Afternoon Snack (4:15 pm): granola bar

Late Snack(6 pm): 1 snack size sun chips

Dinner (7:30pm): 1 ¾ cups shrimp pad Thai and water

Dessert (9pm): 6 ounces low fat strawberry mousse

Total Calories Recommended: 1888
Total Calories Consumed Today: 2039
Difference in total Calories: -151

Exercise: 30 minutes jog/walk

Thought for the day: I must take my meds or pay the consequences.
