I say Tamarind Pulp you say what? - Day 8 Week 2

Sooooooo sleepy. Have I mentioned how much I hate Monday’s? Because of my crazy meltdown yesterday I slept in until 4 pm so there was no way I could go to sleep at a decent time last night. The last time I looked at the clock it was 3AM. I stopped looking after that and I dozed a little bit but didn’t get good, deep sleep. What else is new for a Monday?
Work was pretty easy, nothing do demanding going on, just the same busy schedule as always. Today nobody offered me any bad food so I didn’t have to fight the binge monster or temptation demon. So far so good.
I did realize today that I need to eat protein at breakfast or else I’m starving by lunch and don’t quite feel full. I’ve been eating eggs early for breakfast before I eat my cereal and I’ve noticed that it keeps me full and satiated much longer. Today I had a bagel with cream cheese in the early a.m. then I had my cereal and I was starving a few hours later. I could also tell that all those carbs were not good for me because I was thirsty all day long, hence the gum and lollipop today. My mouth felt gross and dry. My blood sugar must have been high since I was so thirsty.
I got crazy sleepy around noon and since it was so nice and sunny and warm outside I decided to take a nap in my car for ½ an hour. The warm sun on my face felt great. I couldn’t really fall asleep comfortably but it definitely helped and I was able to return to work and keep my eyes open.
My dinner plans didn’t pan out since I had decided to make some whole wheat spaghetti for dinner with spinach. My plans changed when L asked me if I wanted to go grocery shopping with her. We had decided on Sunday to make 3 meals at home together. It would save us money, make us eat healthier and inspire us to actually cook if we did it together.
I agreed to go with her. We first went to TJ Max and Target. She was trying to find some spring clothes. I looked on enviously as she scoured the size 4 rack at TJ Max. I went over to the plus size section and was disgusted with the selections. It was a very small selection and very matronly. Why do designers not get the fact the bigger women want to wear what the smaller woman are wearing just in bigger sizes. Instead they make tents for us to wear. YUCK!
We got a lot of our groceries for our meals at Target but the fresh produce and specialty stuff we had to get somewhere else. L wanted to try and make Pad Thai at home and it seemed overly ambitious to me especially for 2 novice cooks but I figured what the hell. We found the rest of the items on our list at Dominick’s but something called Tamarind paste eluded us. We scoured the Asian section at Dominick’s but had no luck. We even went to the Asian market but alas we arrived at 3 minutes to 8 and they were closed already. Foiled by the tamarind paste gods. We would have to stop by the Asian market on another night to pick it up. We both have no idea what it is or what it tastes like or looks like but we want to keep to the recipe. We both have had bad cooking experiences where we didn’t quite stick to the recipe and the “improvements” we made to our dish didn’t turn out at all. My worst to date have been my super salty chicken and rice bake that tasted like a salt lick and my dog wouldn’t even eat it and she eats lint. Also the pasta I made for W on his birthday. It was supposed to have a creamy sauce made with oil and eggs but I didn’t stick to the recipe and the sauce turned to scrambled eggs. I gave W scrambled egg pasta for his birthday. He ate it anyway reassuring me that it wasn’t horrible. Did I mention what a great boyfriend I have?
We have our groceries and are prepared to make some healthy meals at home this week. Tomorrow we are making this black bean and spicy sausage soup thing that reminds me of chili. I will have to let you know how well it turns out.
For dinner we stopped at Pompeii restaurant in Schaumburg. I was starving after shopping and way too tired to go home and make dinner. I did pick some of the healthier options and pushed away the bread basked and passed on the soda in favor of water. Yah, me!

Early Breakfast (7AM): ½ small wheat bagel and 1/2 tbs light cream cheese.

Breakfast (8:30 AM): 1 ¼ cup Kellogg’s Healthy Start cereal, 1 cup organic 1%milk, ½ banana.

Lunch: (1 PM): Turkey Sandwich (2 slices whole wheat bread, 3 slices turkey, 1 tbs light mayo, 1 tbs spicy brown mustard, lettuce, light cheddar cheese), Orange, diet Pepsi Max.

Afternoon Snack (2:45 pm): stick of gum and lollipop

Dinner (7pm): ½ order spinach ravioli, 1/3rd big green bean salad (green beans, cheese, olive oil, cherry tomatoes), ½ slice black olive pizza and water.

Evening Snack (8 PM): chocolate covered banana

Total Calories Consumed Today: 1931
Difference in total Calories: -43

Exercise: None (bad Mary) I was super tired from not being able to sleep so I skipped it today but will be back on track tomorrow.

Thought for the day: I have an awesome roommate and boyfriend who are willing to support me in everything I do. How many people can say they have complete support form family and friends? I should count myself lucky.
