Weigh in #8 & Weekend Eats
So last week I lost 0.2 lbs. and it was a little bit deflating, but I had no choice but to keep moving forward. So I did exactly that and this week was a mirror image of last week. I tracked my calories and stayed within my range which is 1,800. I also did cardio 3 times this week, walked half a mile at lunch 4 out of 5 days and I did yoga once. I also managed to meal prep for the week even though this weekend I was feeling like poop. Elliana was sick again and I was feeling like I was coming down with it too. I was both exhausted and drained and didn’t want to do move from the couch, much less meal prep. But I knew that if I didn’t do it, this week could turn very bad, very fast. Which is what happened last month when I got a sinus infection and then went off the rails for a week and a half and gained over 2 lbs. Not this time, oh no, I had learned my lesson the first time. I popped some Tylenol and was able to muster the energy to make our meals for the week. So I did really well but I had absolutely no idea what my body was going to do this week.
Anywho on to my eats:
Saturday
Breakfast: Open faced egg sandwich & cherries. Sandwich
was 2 slices of sprouted bread, 1 slice of Colby jack cheese and 2 eggs. Drank
coffee with breakfast.
Snack: Half cup of plain, non-fat, Greek yogurt with keto
maple syrup, 1/3 cup of blueberries and a 1/3 cup of cheerios.
Lunch: Baked potato with butter, ground turkey, sour cream,
and salsa with a side of roasted asparagus
Snack: Orange vanilla ice cream bar
Dinner: Salad (spring mix, bell pepper, tomatoes, cucumbers
leftover roasted asparagus) with Italian chicken sausage & chipotle ranch
dressing. I put half of it in a low carb wrap.
Exercise: 30-minute cardio dance DVD
Total Calories: 1,829
Calories burned from workout: -360
Sunday
Breakfast: Hubby made chocolate Kodiak Cake waffles and I
put 1 tbsp. keto maple syrup on it. I also added an egg and turkey bacon for
protein. Also had a coffee (not pictured)
Lunch: Half an order of chicken fajitas from our local Mexican restaurant. I said no to the rice and tortillas that normally comes with it. I also shared my refried beans with Elliana. Saved the other half for dinner.
Snack: 2 cups of cherries. I shared my cherries with
Elliana.
Dinner: Left over chicken fajitas from lunch. Not as pretty looking as the first time but still delicious.
Snack: Whole wheat crackers and Gouda cheese stick
Bonus: Meal prep Sunday was a success
Exercise: none, my well-deserved rest day

Honestly when people ask me how I lost most of my weight during
lock down and quarantine and working from home well this was my secret. It also helped that we couldn't go out to eat and I wasn't hitting up the drive-thru on my way to work. We had good food and I ate that good food and I lost a lot of weight. That simple.
