Weigh in #5 & Weekend Eats (4th of July edition)
I hope everyone had an amazing 4th. Yay, America day.
The last week in June, I really kicked it up a notch. My goal was to lose 3.5 lbs. in June and because of my week and a half of gluttony I was only 2lbs down with 1 week left. I did not think I was going to make my goal, but I wanted to give it my all and at the end of the week, regardless of the scale I wanted to look back and feel proud and know that I did everything I could, and I gave it 110%.
I was pleasantly surprised by the results.
Although looking at my first weekend in July, I could have
done a lot better. On Saturday I ended up having close to 450 calories worth of
snack. Do better Mary, do better! Sunday after spending 4th of July
with family and swimming in the pool we were pooped and ended up getting Taco
bell. Why????
On Monday I got my act together again and meal prepped low carb eggplant lasagna for a few lunches and chopped some veggies for healthy salads. Setting the rest of the week up for success prepared me to kick butt this week. I got this!
Any who on to my eats:
Saturday
Breakfast: 2 sunny side up eggs, 1 slice of Colby cheese, 1
piece of toast, 2 slices turkey bacon and cherry tomatoes
Snack: coconut kind bar and half a Charleston chew (no picture)
Lunch: refried bean flautas, sour cream to dip, rice, salad
with light ranch
Snack: 6 wheat crackers with a gouda cheese stick & strawberries and an Argo iced tea
Total Calories: 2066
Calories burned from workout: -338
Sunday
Breakfast: Hubby made chocolate waffles again, yummy! I added 2 eggs and 2 slices of turkey bacon for some protein. Used keto syrup.
Snack: 6 wheat crackers and string cheese.
Lunch: Chopped salad from local restaurant with 2 tbsp. balsamic vinaigrette (forgot to take a picture put here's the image from the restaurants website.
Snack: hummus, pepperoni and mozz cheese on a low carb tortilla
Dinner: We were all tired from swimming and being out in the sun so we ended up hitting the Taco Bell drive thru. 2 chicken soft tacos al fresco, pintos 'n cheese and then I ate the left over half of Elliana's cheesy bean and rice burrito. Geez!
Exercise: none, my well deserved rest day
Total Calories: 2460 – no Bueno. The taco bell and salad with all those delicious fixing put me waaaay over.
Monday
Breakfast: 2 sunny side up eggs with hot sauce, there's potato hash underneath and 2 corn tortillas
Lunch: made pepperoni pizzas on pita bread and watermelon
Snack: 6 wheat crackers with a gouda cheese stick, cherry tomatoes and kiwi strawberry sparkling ice drink.
Dinner: Grilled skirt steak and grilled asparagus with a low carb tortilla
Exercise – None, spent all day cleaning which was a workout
in its self
Starting weight (July 1st 2021): 215
Last week’s weight: 213
Current weight: 208.9 (-4.1)
Total weight loss: -6.1 lbs
I could not believe my eyes when I got on the scale. A 4.1 lb loss in a week is insane! I actually had to get off and back on the scale just to make sure it was reading correctly and yes it was. I obliterated my goal of losing 3.5 lbs in June.
So even though I got off track for a week and a half that stumble did not negate all the hard work I put in for the rest of the month. Eating as many freggies as I could fit in, counting my calories, talking walks at lunch and working out. It goes to show that when you fall and you fail, just get back up, dust yourself off and keep going. Just keep moving forward.
Also losing those 4.1 lbs means that I have officially lost 61
lbs from my pre-pregnancy weight. I hit that elusive 60 pound mark and it felt
amazing! 65 lbs here I come!
